The three-field system and medieval crop rotation
The three-field system — Dreifelderwirtschaft in the German literature, assolement triennal in French — names a rotation in which the arable of a village is divided into three large blocks: an autumn-sown “winter” field of bread grains (wheat and rye), a spring-sown field of oats, barley, pulses, and fodder, and a third block left fallow to be grazed and manured. It replaced, where it replaced, a more ancient two-course alternation of one sown field and one fallow. In its full form, the three-field system is the most visible agrarian institution of the medieval village north of the Loire, and almost every account of medieval agriculture begins with it.
What the older textbook tradition got right was the simple arithmetic. A village that had cultivated half its arable in any given year under the older system was now cultivating two-thirds; the same arable produced, in a good year, between a third and a half more grain. What it got wrong, and what the work of the last forty years has done much to correct, was the assumption that the three-field system was a uniform innovation, introduced once and for all, and that it is the single key to the medieval agricultural revolution. In practice the system was extraordinarily varied: it spread at different times, was combined with the older two-field pattern in many regions, and sat alongside a wide range of local rotations on the heavy clays, the sandy uplands, and the Mediterranean dry-farmed fields where the assolement biennal continued to be rational well into the fifteenth century.
A Brief History of the Rotation
The origins of the three-field system are obscure. The earliest documentary evidence is in the late Carolingian period: the polyptych of the abbey of Saint-Germain-des-Prés (c. 820) already distinguishes the semenatura hiberna (winter sowing), the semenatura vernalis (spring sowing), and the novalis (fallow), and Charlemagne’s Capitulare de villis (c. 800) assumes the discipline of autumn and spring sowings. The agronomical writers of antiquity — Columella, Palladius, Pliny — had known the rotation in principle, and the technical diffusion appears to have been a slow affair, picking up speed in the ninth and tenth centuries and reaching its full extension in the great wave of internal colonisation of the eleventh and twelfth.
The geographical spread was uneven. The Cartae of the eleventh-century Flemish abbeys and the Boldon Book of the bishop of Durham in 1183 record the three-field system in the North-Sea plain and the English Danelaw. The Carolingian heartland — the Île-de-France, the Rhineland, the Middle Elbe — was already in three-field rotation by 1100. In southern France, the Mediterranean, and much of the Italian peninsula, the two-field alternation of wheat and fallow persisted, supplemented by the legume-rich coltura promiscua of the Po Valley and the orchard-and-vineyard mixed systems of Tuscany and Provence. In the Slavic lands east of the Elbe the three-field system spread with the German settlement of the twelfth and thirteenth centuries; the Urkundenbuch of the bishopric of Havelberg (c. 1150) shows the Dreifelderwirtschaft imposed on a cleared Lokator village by a Cistercian or Premonstratensian grange.
The system was, in this reading, a technique of the open-field heavy-plough belt, where the long, narrow billons of the heavy plough required communal coordination of the rotation. On the light soils of the sandy uplands, on the Mediterranean, and in the highland zones of pastoralism, it was less efficient than the older two-course pattern, and the regional variation of the rotation in the late Middle Ages is the strongest argument against any simple “invention” of the three-field system.
The Open Field and the Cooperation of the Village
The three-field system was not just a rotation; it was a method of organising the work of a village. The open fields were divided into a small number of large blocks (the terres, the Gewanne, the campi) and the blocks were cultivated in a common rotation. Within each block, the strips of the individual tenants — the selions of the manorial extents — were scattered in a deliberately fragmented pattern, so that each household had a share of the good land and the bad, the dry ridge and the damp hollow. The reallocation of strips at periodic intervals (the partage, the Flurzwang) ensured that no household could improve at the expense of its neighbours, and it forced a common rhythm of ploughing, sowing, harvesting, and fallowing.
The standard account of the open field stresses communal regulation and the discipline of the Flurzwang — the obligation to plough, sow, and harvest at the same time as one’s neighbours. The revisionist literature, of which John Hatcher and Mark Bailey’s Modelling the Middle Ages (2001) and Rosamond Faith’s The English Peasantry and the Growth of Lordship (1997) are the most influential, has stressed the contractual and the proprietary. The strips were, in law, the property of the customary tenants; the village community was a contractually defined group of co-operating owners, not a collective. The manorial court rolls of the Curia Regis and the surviving court rolls of the bishop of Winchester’s manors — the Hyde Abbey custumal, the Winchester Survey of 1348–1349 — show a continuous negotiation between lord, customary tenants, and freeholders over the precise pattern of the rotation, the dates of the common sowing, and the rights of afterpasture on the fallow.
The technical literature, of which Walter of Henley’s Hosebonderie (c. 1280) is the most cited English example, took the open field for granted. Walter’s advice to the demesne bailiff — three ploughs to the winter field, three to the spring, three to the fallow, with a strict sequence of winter corn on the novel land — is the standard blueprint of the demesne. The same discipline, mediated through the manorial court, governed the peasant holdings.
What the Rotation Did — and What It Did Not
The arithmetic of the three-field system is favourable but not magical. Bruce Campbell’s English Seigniorial Agriculture 1042–1350 (2000), working from demesne accounts of more than 3,000 English manors, has shown that the yield ratios of wheat moved from about 3.7:1 in the eleventh century to perhaps 4.3:1 on the eve of the Black Death. The increase in output was achieved less by an increase in the yield ratio than by an increase in the sown area — by the conversion of the two-field system to the three-field system, and by the extension of the arable into the assart lands of the woods and the heaths. The same conclusion emerges from the German agrarian history of the Siedlungsgeschichte: the gain of the three-field system was a gain in cultivated area, not a gain in productivity per unit of land.
The legumes of the spring field — vetches, peas, beans, lupins on the light soils — were important. They fixed nitrogen and they fed the livestock that produced the manure that maintained the wheat yields of the winter field. The Tacuinum Sanitatis, the medieval handbook of hygiene and regimen based on the eleventh-century Taqwim al-sihha of Ibn Butlan, treats peas and beans as the characteristic spring sowing of the ager of northern Italy. The agronomical writers — Palladius, Crescentius of Jesi, Pietro de’ Crescenzi in his Ruralia commoda (c. 1305) — assumed a three-year rotation with a leguminous crop on the spring field. The fallow itself, of course, was not idle: it was grazed by the village flock, and the manure of the folded sheep and the tethered oxen was the foundation of the next winter sowing.
The open-field system, with its strict discipline, was rational at low population densities. It became less rational as population grew. The new assarts of the twelfth and thirteenth centuries broke the discipline of the Gewanne; the infield-outfield system of the highland margins, with a permanent infield in three-field rotation and an outfield of shifting cultivation, was a regional response. The Mediterranean region, with its dry-farmed wheat-fallow rotation, its orchard-and-vineyard mixed systems, and its coltura promiscua of the Po plain, never adopted the three-field system on a substantial scale. The economic history of the late Middle Ages is, in this sense, a regional history, and the textbook account of the three-field system as a European norm badly understates the variation.
The Demographer’s Reading
The demographic reading of the three-field system, associated in the French tradition with Marc Bloch’s Les caractères originaux de l’histoire rurale française (1931) and in the English tradition with H. L. Gray’s English Field Systems (1915), was that the system made possible the population growth of the eleventh, twelfth, and thirteenth centuries, and that the demographic ceiling was reached when the system was pushed beyond its ecological limits. Georges Duby refined the argument in L’Économie rurale et la vie des campagnes (1962): the three-field system, by raising the productivity of labour rather than the productivity of land, freed a growing population from the Malthusian trap, but only until the expansion of the cultivated area and the diminishing returns of marginal land brought the same trap back.
The revisionist challenge to the demographer’s reading has come from the agronomists and from the agricultural historians proper. David Stone’s Decision-Making in Medieval Agriculture (2005), John Langdon’s Horses, Oxen and Technological Innovation (1986), and Judith Bennett’s work on English women’s contribution to the demesne have all stressed the choices available to medieval farmers. The three-field system was one of a portfolio of rotations, and the choice of rotation depended on soil, climate, distance to market, and the availability of manure. The Malthusian narrative assumes a uniform technology and a uniform response; the agrarian evidence suggests a more contingent, more local, and more strategic peasantry than the demographer’s model allows.
The Late-Medieval Transformation
The three-field system did not, on the whole, “decline” in the late Middle Ages. The open fields of the English Midlands, the Flemish Kasselrij lands, the Börde of northern Germany, and the Île-de-France continued in three-course rotation well into the sixteenth century. What changed, in the generation after the Black Death, was the relationship between the open field and the surrounding land. The assart lands of the twelfth and thirteenth centuries, marginal at the best of times, were abandoned. The demesnes of the great estates, in England especially, were progressively leased out. The enclosure of the open fields — the consolidation of the scattered strips into a small number of large blocks held by individual owners — was a slow, partial, and regionally uneven process, most advanced in the claylands of the English Midlands, less advanced in the chalk and limestone belts, and almost unknown in the North-Sea plain until the seventeenth century.
The standard account, that the transformation of the fifteenth and sixteenth centuries was driven by the wool trade and the rise of pastoral farming, is right in the broad picture. It is wrong in the detail. The change was regional, partial, and reversible. The English Midlands saw a sustained programme of enclosure in the fifteenth and sixteenth centuries, with the open fields of Northamptonshire, Warwickshire, and Leicestershire progressively reduced to a few large blocks. The chalk and limestone belt, with its high costs of clearance, was slower; the downland pastoralism of the Cotswolds and the Wolds, the great centre of the English fine-wool trade, was a different agrarian regime. The late-medieval English field system, in other words, was a system in transition, and the three-field rotation survived long after the economic historians had declared it dead.
Reading the Evidence
The evidence for the three-field system is a mix. The manorial extents of the eleventh to fourteenth centuries are the principal documentary source for the high medieval period; the Domesday Book (1086), the Boldon Book (1183), the Hundred Rolls (1279), the Inquisitions post mortem of the Calendarium Inquisitionum, the Taxatio Ecclesiastica (1291), and the Nonarum Inquisitiones (1340) are the principal English sources. The French and German equivalents are the polyptychs of the great abbeys (Saint-Germain-des-Prés, Saint-Denis, Fulda, Prüm, Lorsch) and the Urkundenbücher of the bishoprics and free cities. The demographic and agricultural reconstruction is the work of Postan, Duby, and Campbell, working in two distinct traditions. The work of Bennett, Hatcher, Langdon, and Faith has shifted the centre of gravity toward the choices of the peasant household, the role of the agronomical writers, and the legal and institutional history of the open field.
The three-field system, in the end, is best read as one element of a more complex field system. It was the most efficient rotation of the heavy-plough belt, and it was the rotation of the high medieval demographic expansion. It was not the only rotation, it was not a uniform innovation, and it was not the single cause of medieval population growth. The late medieval countryside that the Black Death left behind was a countryside in which the three-field system remained the norm in the heavy-plough belt and a system of mixed rotations continued in the Mediterranean, the highland margins, and the dry-farmed south.
